Brian, we already had a discussion about Takashi Miike.
You still need to see Visitor Q.

Other silly Japanese splatter type shit:
Suicide Club
Entrails of a Beautiful Woman

Bob, Park Chan Wook's four films are all amazing:
Joint Security Area was his first and is actually a drama about North and South Korean soldiers who become friends while working the DMZ.
Sympathy for Mr. Vengeance, Oldboy, and Sympathy for Lady Vengeance are his three other films, and are what are commonly referred to as The Vengeance Trilogy.
They're all incredible, but Oldboy is my favorite.

Others:
A Tale of Two Sisters (more of a ghost story)
The Host (a monster movie - about to be On Demand if you have Comcast - this director's other film, Memories of Murder, is a great thriller)
The Isle (FUCKED UP - I would like to watch this one again)
Three...Extremes (three shorts by Takashi Miike, Park Chan Wook, and Fruit Chan)

There are more, but this is what I could drum up from my memory/Netflix ratings in a few minutes...

Thanks for the recommendations. I just finished Oldboy (paternity leave rules!)
I liked it but one question kept running through my head: "what the hell is Gene Simmons doing in a Korean movie?!?!"
