Are you flattening your turkey before cooking? We did that and are dry curing one for four days per the instructions of Alton Brown.

Yep, just butterflied the turkey. It's sitting in brine right now. The idea is to increase the cooking surface area, which lets you cook at a higher temperature to get a more crispy skin while retaining juiciness.
